Beans, Beans!!!

Beans, Beans the magical Fruit
the more you eat, the more you toot.
The more you toot, the better you feel,
so eat your beans at every meal...

Since I have been following Fiber 35, I am singing this little tune almost daily. The reason for this is I have been eating lots of beans. All kinds of beans, but mostly Black beans. They are my favorite and I eat them on everything. I eat them plain, I eat them mixed in my favorite salsa, I eat them in soup, I eat them in salad, I eat them in roll ups, I eat them for breakfast. They contain lots and lots of fiber. And after reading this article on Black Beans, I am discovering they contain a lot of other good for you stuff. I am so happy I love Black Beans!!! They are now part of my every day eating!!!

Here is a little soup recipe that is amazing. Its quick and easy!!!

black bean soup.

1/2 cup fresh tomato salsa (plus extra for garnish)
1 (15.5-ounce) cans black beans, drained and rinsed (I try to always cook my beans fresh so that I do not get as much salt in my diet)
1/2 can fat-free chicken broth
2 tablespoons fat-free sour cream (optional)
2 teaspoons fresh cilantro

Heat the salsa in a large saucepan over medium heat, stirring frequently, for about 5 minutes. Stir in the beans and broth, then heat to boiling. Reduce heat to low. Cover and simmer 15 minutes. Cool slightly, then spoon half the soup into a food processor or blender and puree. Be very careful pureeing hot liquids. Return the pureed soup to the saucepan and heat through. Serve with 1 tablespoon of sour cream per person, cilantro, and additional salsa.
