Full Meal Cornbread

I wanted to share this recipe as it is one of my most favorite meals. I have been cooking it for like 20 years now and never have we gotten bored of it. Just so yummy!!!

1 cup chopped onion
2 tablespoons butter
1 pound of sausage cooked, crumbled, and drained
3 packages of cornbread mix
1 1/3 cups of milk
3 eggs
2 tablespoons sugar
1 can of cream style corn (sweet corn will work also)
1 pound of cheddar cheese
2 or 3 jalapenos
2 tablespoons of jalapeno juice

Saute onion in butter. Add to the cooked sausage. Mix together corn bread mix, milk, eggs, sugar, and corn. Add chopped jalapenos and juice. Pour 1/2 of batter into large 18x12x2 pan. Top with onion, sausage, and 3/4 of cheese. Pour remaining batter over sausage. Bake at 350 for 1 hour and 15 minutes. Sprinkle remaining cheese over top of batter during last 20 minute of cooking.
