Pumpkin Apple Nut Muffins

Wow, I nearly forgot my blog address!!! It seems like forever since I blogged!!! I just have been so busy with baby girls school this year. It takes us the entire day on most days to finish. The rest of the day I am either busy organizing my craft room or actually crafting. Right now I am trying to finish 2 Raggedies I started in January. I am also working on my basket weave scarf. This stitch takes a long time to do, but it is so beautiful and well worth the time. When I finish I will post a picture. So much I want to do, but feel like I have very little time to do it!!! My other time consuming thing is Facebook games. I am so addicted to YoVille, Cafe World, RollerCoaster Kingdom, Farmville, and FarmTown. Yes I do all of them. They are so much fun. I even have my sweet hubby doing them too and its something we enjoy doing together while we watch our favorite fall shows. It really does not take much to entertain us. LOL!!! Anyway, what brought me to post tonight was my healthy yummy Muffins. This is my very own recipe and I have been making them for about 3 months. I think I finally have perfected them enough to share. These are lightly sweet, very low carb, low sugar, and lots of great fiber. They are great with coffee or tea. Each one of us in the family has a different way to eat them. My DD loves them with either honey or cream cheese. My husband loves them with butter and peanut butter!!! He has one almost every night before bed. Me, I love them with just a little sweet cream butter and my favorite Celestial Almond Dessert Tea. It makes the perfect snack most anytime of the day. So here is the recipe below along with a few pictures. Let me know what you think!!! Pumpkin Apple Nut Muffins
2 cups of freshly ground Golden Flax seeds (you can ground them in a coffee grinder. I buy them at the health food store. Be sure to use the Golden and not the brown.)
2 cups of chopped Walnuts
5 eggs
1 cup of heavy Cream
1 1/2 cup of Splenda
1/2 cup of Vanilla Flavored Whey Protein Powder
1 can of Pumpkin
1 granny smith apple diced into small cubes
2 tablespoons of Pumpkin Pie Spice
2 teaspoons of baking powder
2 teaspoons of baking soda
1/4 teaspoon of salt
In a large mixing bowl mix all ingredients together. I usually mix the first 4 ingredients together and then add in each ingredient after that one at a time. Heat oven to 350. Spray muffin pan with Baking spray. Fill each muffin space to the top edge. Bake for about 15 or 20 minutes until muffins are firm and golden. This recipe makes about 24 large muffins. Not sure how many small or mini!!

These sound really good! Especially since I'm hungry! Hubby is bringing me apple fritter from donut shop. (I hope!) I love pumpkin but my family isn't as crazy about it. Maybe they will try them since these have apple in them and are muffins instead of pie!
