I cannot help but wonder what the people would say that threw these pieces away. Just a little gluing, sanding, and painting and that was all it took to turn the old furniture into new furniture. Well I know I am thrilled and so is my little girl. It looks fabulous in her new room. I will take photos of her room as soon as I get the curtains and shelves up. I want it to be completely complete before I show you.
Day 2 of my Weight Watchers is going great. Yesterday, I went over a few of my points that I am allowed, but lucky for me, they give you a point allowance each day. I can have 28 points a day and with my allowance of 5 extra points, I did good!!! My biggest problem yesterday was olive oil on my sub sandwich and eating a whole avocado. 2 very big NO, NO's. So you live and learn and learn and live. Today I knew what I needed to leave off and so this time with my Veggie sub, I left off the oil and mayo and just had vinegar and saved myself about 5 points. That gave me room to have some baked chips with my sandwich which made my meal more filling. Tonight I fixed Meatloaf Muffins. They were so good that I thought I would share the recipe with you.Meatloaf Muffins
1 cup finely crushed fat-free saltine crackers (about 20)
1 cup finely chopped onion
2 tablespoons prepared mustard
1 teaspoon Worcestershire sauce
1 teaspoon dried oregano
1/4 teaspoon freshly ground black pepper
2 garlic cloves minced
2 large eggs
1 cup ketchup divided
1 1/2 pounds lean Turkey meat
Directions for Diner Meat Loaf "muffins" (6 Points)Preheat oven to 350. In a large nonstick skillet spray cooking spray. On medium high heat, add chopped onion, dried oregano, and minced garlic; saute 2 minutes. Cool.Combine onion mixture, 1/2 cup ketchup, and the remaining ingredients except cooking spray in a large bowl. Spoon the meat mixture into 12 muffin cups coated with cooking spray. Top each with 2 teaspoons ketchup. Bake at 350 for 25 minutes or until a thermometer registers 160?. Let stand for 5 minutes.
I served my Meat Loaf Muffins with
Macaroni and Cheese made from whole wheat elbow macaroni and 2% cheddar cheese, 2 tablespoon of Smart Balance butter. Very yummy!!!
Also green beans with 1 tablespoon of Smart Balance butter and 2 cloves of fresh garlic and Mrs. Dash garlic and herb seasoning. Love that Mrs. Dash.
I have not figured up my points yet, but I am guessing around 10 for the entire dinner and that includes a piece of 35 calorie bread. I think I may have room for dessert. Let me think......
