Short but Sweet!!!!

Ok, this will be a very quick post, because I am leaving soon for the movies. I just wanted to say that I had a fantastic week. We went putt putt golfing on Wednesday night. I have not done that in forever. It was great fun. Then on Thursday we went to the movies in the park. We saw the movie Curious George and it was sooooo cute. Had a great time having a picnic and watching the movie. The weather was perfect both nights. A cool gentle breeze and no mesqitoes. I also went to the library yesturday and checked out some recipe books. I am in search of new foods to cook. I started my Slim Fast diet back this week and so I want to try to find some good foods to eat that want kill my calorie intake. Today I made this yummy fruit dip for Strawberries. Strawberries are very, very good fruit to eat and one of the few that is low in sugar and that I personally am able to have. So I thought this recipe sounded yummy to go with them.



1 8 ounce of light sour cream



2 tablespoons of powdered sugar



2 teaspoons of finely shredded lime peel ( I omited this)



1 tablespoon of lime juice ( I added extra)



Strawberrys



In small bowl stir together sour cream, powdered sugar, lime peel, and lime juice.



Serve with Strawberries.



Thats it!!! Its so easy and so yummy. I did add just a tad bit more powdered sugar and lime juice. I wanted it a little sweeter. It taste kind of like Key Lime Pie filling. UMMMMM!!!!! Not sure what the calories are when you add the extra powdered sugar, but the book says the recipe as is has 60 calories for 2 tablespoons of sauce and 3 to 4 strawberries. Thats not bad for a yummy dessert. You also get 1 fiber from eating the strawberries. Now who can pass that up. LOL!!!



On the scrapbook front... I found out this week that my Cricut machine(smaller version) will cut chipboard. I am so happy about that. This is too different thickness. The darker one is the thin chipboard that you get when you purchase packaged paper. The lighter chipboard is thicker and not sure where I got it. I only had to run it through the machine 3 times to cut it out. The thinner chipboard I only had to run through 2 times. When I say run it through, I mean to load the paper, cut the image and unload, then load the paper again and then click the repeat last button and cut a second time and so on.... till your image is cut. Now you may have to trim a little on the thicker chipboard. Depends on the thickness. I am so excited. So 3 cheers for my Cricut!!! Next I plan to see if it will draw using the small sharpie markers. I went today to purchase 2 sizes. I will update you on that later.


One more thing I want to say before I close. My DS passed his written and driving test for his CDL. I know some of you probably did not even know he was trying to get his CDL, but for the last month and 1/2 he has been taking test, failing and taking test. He finally passed them all and is now officially a dump truck driver for our local City street Dept!!! Huge Praises!!!
