Hey, hey, good lookin', whatcha got cookin'?

How's about cookin' something up with me?

We could find us a brand new recipe.

I love that song, And I also love new recipes. Last night I made the most awesome tasting fajitas. I sort of made up the recipe so there is no famous name for the fajitas except for maybe
Really Good Chicken Fajitas

4 chicken breast

2 tablespoons of lemon pepper season

2 tablespoons of olive oil

1 onion

1 red bell pepper

1 carton of sliced mushrooms

1 stick of butter

2 tablespoons of dried minced garlic

1 tablespoon of chicken fajita seasoning

fresh avocado dip (see recipe below)

1 fresh tomato diced

Light sour cream

Monterrey jack cheese

fajita size flour tortilla ( low carb brand is great)

1st marinate the chicken in lemon pepper seasoning and olive oil for about a hour. Be sure to rub both sides of chicken with season and oil.

Then heat up the out door grill and grill the chicken breast slowly until tender and done.

While the chicken is on the grill, Chop one onion, 1 red bell pepper. Prepare a pan with 1 stick of melted butter. Mix onion, bell pepper, 1 container of sliced mushrooms, minced dried garlic, fajita season in the pan. Saute the mixture until the onion becomes very dark brown and all other is tender. Set aside.
Bring in the chicken and slice in thin strips.

Add the chicken to the mixture and stir together. Serve with warm flour tortilla, fresh avocado dip, light sour cream, Monterrey jack cheese, and fresh garden tomatoes. (Hopefully you have a really sweet old man that lives across the street like me that will give you fresh garden tomatoes.

Fresh Guacamole Dip

3 avocados peeled and mashed

dash of garlic

dash of salt and pepper

splash of lemon juice

1/3 cup of light sour cream ( I add this for my DH. He is just learning to eat avocados and it helps to take away some of the strong taste of the avocado. As for me, I love it as strong as I can get it. But sometimes you have to make changes for others sake.)
Stir all ingredients together.

I hope you all enjoy this recipe as much as we did. There sure was not much left for leftovers.

Tonight I made a big NO NO dessert. My husband was craving cinnamon rolls. So whats a women to do!!! She has to do what she can to make her Man happy. Right?? Right!!!! However, I thought no way am I going to make homemade cinnamon rolls. That takes about a day to make. He don't need to be that happy!!! So I thought....... and decided to put together my quick version of cinnamon rolls. I originally got the recipe from Pampered Chef, but then of course I had to tweak it a bit to make it perfect. All for my MAN!!! So hear goes.

Apple Cinnamon Something Anuthers

I am adding a warning label on this recipe. If you are on a diet, Stay Away!!! and I do apologize for tempting you. I am on a diet and I did eat a very, very small piece. I just needed a taste is all. Its really awesome.

2 cans of refrigerator biscuits

4 medium granny smith apples peeled and sliced2 cups of granulated sugar

3 tablespoons of Cinnamon

2 stick of butter melted in 2 separate bowls with 1 stick in each bowl. Set 1 bowl aside for icing.
1 cup of powdered sugar

1 tablespoon of vanilla extract

1 cup of chopped pecans (optional, but I suggest not leaving it out unless you just hate nuts)

4 tablespoons of water

Pour sugar into mixing bowl. Add in the cinnamon. Mix around till blended well. Take biscuits and first dip into bowl containing 1 stick of melted butter. Place dipped biscuit into sugar/cinnamon mixture. Place in baking dish. Continue with the rest of biscuits until are in baking dish. Pour sliced apples over top of biscuits, making sure apples are in between each of the biscuits and distributed evenly.

Pour any left over cinnamon/sugar mixture over biscuits.
Pour any left over butter over biscuits.

Sprinkle pecans all over the top of biscuits.
Bake at 350 degrees until biscuits look brown, fluffy and done.

Mix together
powdered sugar
1 stick of melted butter
4 tablespoons of water

Blend well.

Pour over the top of baked biscuits evenly. Don't miss any spots, because if you do, your DH will let you know. LOL!!!!

This was hubby's piece, mine was much, much smaller!! Really it was!!!

LOL!!! Anyway, That's it!!! Enjoy and hopefully with less quilt than I had.

On the Scrapbook front......

I spent the week so far taking my DD to scrapbook camp. Its been a fun week. She has made lots of great 12x12 pages, several greeting cards and some crafty projects. There are 6 girls in the class.
As for me, I have been working on one of my 8x8 books and I have almost completed it. I will share pictures of course once I do. I also have had a great time scrapbooking with my friends HO and G. I love going to the store during the day. There are hardly any other addicts there and so I can have a entire 7 ft table to myself. Boy do I spread out.

Also this week at home, I have been working on my friend HO's birthday gift. I finished it last night and gave it to her today. She seem to really like it.

These are altered items. I purchased the chickens at a dollar general store. I totally altered them from top to bottom. I used Daisy D paper and decoupaged the body's and the front of the shelf. I painted the rest of the chickens with beige acrylic paint and barn red. I used my Cricut to cut out their goozles. It was a heart I turned upside down. I painted them barn red. I used my crystal stickles on the beaks, dots on wings and parts of the body's. I used my Base Camp Cricut font on the words "The Crop Coop" and then stickles them. On each of the jars, I painted the tops with barn red and then decoupaged the paper on the very top. I hung little tags from my Cricut using dmc floss. The jars were used Making Memory flower jars. It was soooo much fun to do. I have not done something like this in several years when I use to own my on craft business. Sometimes its fun to get back to your roots.
Speaking of Cricut. I got my newest cartridge in today. Yippy!! Yawhoooeeee!!! What a deal too. It was buy 2 for 50.00 from Creative Express. So me and my friend HO went in together. She got one and I got the other. So for 30.00 tax and all, I got a 60.00 cartridge. This one is called Stamped. It looks like loads of fun. I cannot wait to play with it. Thats it for scrapbooking this week!!!

On the home front.....

Besides cooking all the yummy foods, I have actually been trying to get strict with my weight lose. Its a on going process with me. I am sure it will be for the rest of my born days. As you can see, cooking yummy desserts does not quicken the process. This past week I have been doing Slimfast. Its been a while since I gave this a try and since nothing else has been working, I might as well try again. I love,love the shakes and I really love how fast you can just mix them up and go. My favorite is the milk chocolate,strawberry, vanilla, oh shoot, I love them all!!! I am actually drinking the Milk chocolate with the extra protein right now. I want to make sure since I am doing 2 meal replacements a day, that I get enough protein. The suggested amount a day is 25 grams. There is 7 in the powder and 7 in my soy milk that I mix it with, so that means 14 total per shake, which is 28 G's total for the day. How do you like that math!!! LOL!!!! Plus I am getting 10 G's of fiber. That's not a lot, but its a start. The amount of fiber suggested is at least 35 G's a day, so I am having a little bit harder time getting in my fiber for the day by doing the shakes. I have not seen any significant weight loss yet, but I feel really good. A online diet buddy suggested the "Walk the Walk" tape for indoor walking. I totally forgot I had that tape already. I use to do it a while back, but had put it away. So I dug it back out last Wednesday I think it was and did it Wednesday and Thursday night. Hubby and I started out with the mile walk. I was only able to fit it in those 2 days last week, so this week we started out today with the 2 mile. Got lots of ground to make up. Its such a great tape. Very low impact, but will get the heart beeping (as my little girl calls it) pretty fast!!! She is such a awesome instructor. She is a Christian based teacher and while you are doing the walk, the background music is Christian music. She encourages you to praise God as you walk and to reach up and Thank him for your blessings. Just very awesome teacher. At the end of my video, there is even a message from her pastor. What a cleaver way to reach out to people and tell them about Jesus. I love it!!! You can buy the DVD's at most Christian book stores, Walmart and Hastings. Maybe some other places as well. Give it a try!!! I think you will love it too!!!

What else have I done. I finished reading a entire book. Yes, its hard to believe. I am not one to do a lot of reading. Mostly magazines (health, scrapbook, stamping and women's world) is the limit to what I read. However, I recently decided it was time for me to do some reading. So I picked up a book that I bought sometime back at the thrift store. Its called 'Sister Chicks on the Loose".
I just totally loved this book. I laughed, I cried. I just could not put it down. I blocked the world out when I was reading it. Its the first time since Charlotte's Web in 3rd,4th,5th,6th grades(I read it every year over and over. It was my favorite book) that I was able to read an entire book without falling asleep before chapter 2. Its a feel good book about friendship and the rediscovery of how God truly does work within our lives just when we need him. I loved it so much that I am now on Chapter 3 of the next book. There are a series of several books. Not sure of the number in the series, but I know there are at least 2 more other than these. Robin Gunn the Arthur also writes several other book series for teens and young adults. She is a Christian writer, so all of her books are feel good books from what I have gathered.

I cannot wait to really get into this next book. Hawaii here I come!!!

One last thing before I close this extremely long post. If you read all of this before 10:00 tomorrow, would you please send up a prayer for my sweet MIL. She is going into the hospital tomorrow for testing of her heart. She is having a die scope put up her leg and into her heart to look around. If there is blockage, than they will also do angioplasty. She could be there tomorrow for 6 hours or it could turn into 1 to 3 days. All depending on how she does. Right now her heart sounds as though there is blockage. She is 79.5 years old. So I am very worried about her. So please send one up for her during your prayer time. Thank you!!!
