Sunday morning, I was sleeping so good and then my dreams were ripped out of my head with a face in my face saying loudly "Get up and get dressed" "If we are going to see the movie today, we need to go to the first showing." It was my overly excited DH, if you were trying to guess who the face was. We were going to see Pirates of the Carribean. I truly do love this man, but sometimes he gets just a little excited about stuff. He wanted to get there early, so that we did not have to stand in line. With it being the first weekend for the movie, there is always a line. Him waking me up was definately for good reason, but I sure was enjoying my beauty sleep. So up I get, one lid still closed and putting on my clothes and shoes. No time for hair do's or makeup. I just thank the Lord for hair clips and sunglasses. Within 10 minutes of feet hitting the floor, we were off to sail the great Seas with Captain Jack Sparrow. We get there like 45 minutes before the show started and Go Figure, not a person in site. LOL!!! But Hey, thanks to my darling DH, we were the first in line. LOL!!! We met and succeeded our goals for the day!!! Finally when it was time to seat, people did start pouring in. So I guess it was worth loosing a few winks of sleep to be first in line. Movie started, food came and I laughed,cried and drewled through the entire movie. I refuse to ruin the movie for you in case you have not seen it yet, but just let me say one thing about the drewling remark. That would be OOOOOOLALALALALA and LA LA some more. That Orlando Bloom makes a much better Captain of his Ship, than a ordinary shipmate or a Fairy or whatever he was in the Lord of the Rings. I have not been a fan until now. I just love a man in uniform even if it is a Pirates Uniform. I nearly melted in my seat. I really did enjoy him a Um I mean the movie. I was told that this was the last movie, but I am thinking after seeing this movie, that they sure did leave it open for yet another. I know I said in my last post that I would like it to end, but I am having second thoughts now. I think I could get excited once again for another sequel. I guess we will have to wait and see.
Monday, was a very restful day. We stayed home and watched the "House" series. We rented the first and second series. Its a great show, but I always missed it during the week. So we decided to rent the series and watch them all at one time. So we did a "House" marathon. I decided to make a new recipe for dinner to go along with our shows. Have you ever had the Southwestern Eggrolls at Chilli's? Yum!!! They are a little spicy, but they are delicious. So I got a hankering for them and decided to search out a recipe to make them. I had gone shopping on Sunday after the movies and bought all the ingredients. So now it was time to prepare and cook. The recipe has a lot of ingredients and does take some preparation time, but it is well worth every minute. Its a excellent recipe and if you are looking for something new and yummy, I recommend you to make them. As not to waste any ingredients, you can triple the recipe as I did and put them in the freezer and then take out however many you want to cook anytime. Here is the recipe I used. I did not, but you can omit the use of oil and bake these for less fat. I did however use the Carb Balance tortillas, which has 7 grams of fiber per tortilla. They are very soft and yummy. I think after subtracting the fiber, you end up with 5 grams of carbs per tortilla. They cost a little more, but are worth the extra money for the extra fiber.
2 tablespoons vegetable oil
1 skinless, boneless chicken breast half
2 tablespoons minced green onion
2 tablespoons minced red bell pepper
1/3 cup frozen corn kernels
1/4 cup black beans, rinsed and drained
2 tablespoons frozen chopped spinach, thawed and drained
2 tablespoons diced jalapeno peppers (mild for less spicy)
1/2 tablespoon minced fresh parsley
1/2 teaspoon ground cumin
1/2 teaspoon chili powder
1/3 teaspoon salt
1 pinch ground cayenne pepper
3/4 cup shredded Monterey Jack cheese
5 (6 inch) flour tortillas
1 quart oil for deep frying
Rub 1 tablespoon vegetable oil over chicken breast. In a medium saucepan over medium heat, cook chicken approximately 5 minutes per side, until meat is no longer pink and juices run clear. Remove from heat and set aside.
Heat remaining 1 tablespoon vegetable oil in a medium saucepan over medium heat. Stir in green onion and red pepper. Cook and stir 5 minutes, until tender.
Dice chicken and mix into the pan with onion and red pepper. Mix in corn, black beans, spinach, jalapeno peppers, parsley, cumin, chili powder, salt and cayenne pepper. Cook and stir 5 minutes, until well blended and tender. Remove from heat and stir in Monterey Jack cheese so that it melts.
Wrap tortillas with a clean, lightly moist cloth. Microwave on high approximately 1 minute, or until hot and pliable.
Spoon even amounts of the mixture into each tortilla. Fold ends of tortillas, then roll tightly around mixture. Secure with toothpicks. Arrange in a medium dish, cover with plastic, and place in the freezer. Freeze at least 4 hours.
In a large, deep skillet, heat oil for deep frying to 375 degrees F (190 degrees C). Deep fry frozen, stuffed tortillas 10 minutes each, or until dark golden brown. Drain on paper towels before serving.
After our delicious dinner, I decided to work on my crochet. I spent the first 30 minutes untangliing the thread. Then I finally got started on a hat pattern I had found at Wal-mart. I defiantly like crocheting better than knitting, but there comes a time when a girl must admit defeat. How did I come to this decision that I might not be cut out for needle work? Lets continue on and you will see.
Today I got up and started right in on my hat and was determined to complete it. I was so proud of myself when I got to my last row. Proud to have started and completed something so quickly. I rarely complete anything I start. I was so proud, until I turned it to the right side and saw my duck tail.
The front does not look to bad!!!
But the back is a different story all together.
Ok, Ok when you are done laughing, could you tell me what the heck happen. I counted all my stitches and rows and I ended up with a duck tail. "SIGH" I thought I might just stick a big ol honker flower on it and maybe it would hide the duck tail. I guess that is what I get for rushing.
I guess you just got to laugh about it and go on to the next project. This is my second hat and neither of them turned out. The first one had more holes in it than Swiss cheese and this one has a duck tale. I cannot wait to see what the next one looks like. Yes, I am going to try it again. I guess I am not ready to admit defeat just yet. After all, I think before one can admit defeat, they must have a full box of complete failures before they can give it up. LOL!!!! That way they have plenty of proof to back up their reason for failing and when I say I gave it my all, I can truly say "I gave it my all and here's my proof!!!"
This week I plan to finish up a few projects for the weekend. I am going to a all day crop in a near town on Saturday and I need to finish up a little book for a friend that will be attending the crop. I would like to also make some little stamp gifts for each of the ladies I will be cropping with.
